Crockpot Minestrone Soup

Today when I woke up I swear it was soup weather…

so I started making soup!

2 hours later it was 90 degrees YUCK!!

Thank goodness I made this in the crockpot!

 

To make this delicious minestrone in the crockpot, you will need the following ingredients:

  • 1/2 onion, chopped
  • 1 cup carrots, chopped
  • 1 celery stalk, chopped
  • 2 garlic cloves, minced
  • 1/4 tsp crushed red peppers
  • 1 (28 oz) can crushed or diced tomatoes
  • 1 (15 oz) can white beans, drained, rinsed (cannellini or navy)
  • 4 cups fat free chicken broth (or vegetable broth for vegetarians)
  • 1/2 cup of good shredded Parmesan cheese
  • 2 bay leaves
  • 2 tbsp chopped fresh basil
  • 1/4 cup dried parsley leaves
  • 1 tbls salt
  • 1/2 tsp pepper
  • 2 small zucchini, chopped
  • 2 cups chopped fresh spinach
  • 2 cups cooked small pasta like shells or elbows (al dente)

in a blender, large cup or bowl, add 1 cup of the chicken broth

and 1 15 oz can cannellini beans rinsed and drained.

blend until smooth

and pour into crockpot.

add remaining 3 cups of chicken broth

28oz can diced or crushed tomatoes

1 chopped celery stalk

1 small onion, chopped

1 cup chopped carrots

2 cloves chopped garlic

2 bay leaves

1/4 cup dried parsley

2 tablespoons fresh chopped basil

1 tablespoon salt

1 tsp pepper

1/4 tsp crushed red pepper

2 small zucchini diced

2 cups fresh chopped spinach

stir will and cook on low for 8-10 hours or on high for 4-6 hours

about 30 minutes before serving, add cooked pasta

top with shaved Parmesan cheese
