For a low carb, low calorie alternative to mashed potatoes, try my Cauliflower Mashed Potatoes!
With lots of vitamins and nutrients this delicious substitute is sure to please!

To make these cauliflower mashed potatoes, you will need the following ingredients:
1 head cauliflower
tablespoon butter
skim milk
Salt & pepper
Paprika
The texture is thin, so if you like a thicker consistency, add 1/4 mashed potato flakes (optional)
Cook (steam) cauliflower until it squishes through the prongs of a fork!
break hot cauliflower up into pieces and place in a blender
add a tablespoon of butter
add skim milk. (the reason I dont give an amount here is because it is up to you. I did use about 1/4 cup)
also add salt and pepper to taste.
blend until smooth
spray a baking dish with a cooking spray such as PAM

pour cauliflower mashed potatoes into baking dish

and sprinkle with paprika
Bake in a pre-heated 350 degree oven until bubbly
