Candied Ginger Citrus Scones

These are hands down the BEST scones I have ever made!! The ginger mellows out after being baked. The result is a sweet, light and almost refreshing scone!

To make these candied ginger citrus scones, you will need the following ingredients:

2 1/4 cups all purpose flour

1/3 cup sugar

1 tablespoon baking powder

zest of 1 lemon

8 tablespoons chilled unsalted butter, cut into small pieces

3 tablespoons chilled salted butter, cut into small pieces

3/4 cup plus 2 tablespoons whipping cream

2/3 cup diced candied ginger

1 tsp of orange oil (I bought my oil at the health food store)

Wilton sparkling sugar (or any coarse sugar)

In a food processor, mix together 2 1/4 cups flour,

1/3 cup sugar

1 tablespoon baking powder

zest of one lemon

pulse ingredients

add butter and mix well

until crumbly

make a well

in the center of the well, add 3/4 of the whipping cream

and the teaspoon of orange oil.

using a fork, stir until moist.

add the 1/3 cup diced candied ginger

turn onto a floured surface and kneed about 8 – 10 turns. divide dough in half and pat into

3/4 inch rounds. Cut each round into 6 pie wedges or cut out with your favorite cutter.

brush the top of each scone with remaining 2 tablespoons cream and top with Wilton sparkling sugar.

Bake on a lightly buttered pan or on a Silpat liner in a pre-heated 400 degree oven for about 18 minutes.

Serve with your favorite jam or Devonshire cream
