BubbleCrumb Blueberry Buckle

Today I looked in my fridge, and realized I had blueberries that HAD to be eaten.

Mmmm.. I’ll make Blueberry Buckle!

Blueberry Buckle is like coffeecake or crumb cake.

Not too sweet, vanilla ice cream or whipped cream is the perfect compliment!
To make this “just sweet enough” Blueberry Buckle, you will need the following ingredients:


Topping:
1/3 cup all purpose flour
1/3 cup white sugar, mounded
1/2 teaspoon cinnamon
1/4 cup cold, unsalted butter (cut into pieces)

Batter:
1 cup all purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup unsalted butter, room temperature
1/2 cup white sugar
1 large egg
1/2 teaspoon vanilla extract
1/3 cup milk
1 pint fresh blueberries

Pre-heat oven to 350 and spray a 8×8 or comparable baking dish with cooking spray.

In a small bowl, combine 1/3 cup all purpose flour,

1/3 cup sugar,

and 1/2 teaspoon cinnamon.

Mix.

Add 1 stick very cold unsalted butter, cubed.

With a pastry cutter or fork, cut butter into topping mixture.

Mixture should be crumbly and well combined.

In a separate bowl combine 1 cup flour,


1 teaspoon baking powder,



1/8 teaspoon salt




In the bowl of a stand mixer,
I use a standard Kitchen Aid Click HERE to see the one I use.
(If you have one, if not you can use a hand mixer)
add 1/4 cup unsalted butter, room temperature


1/2 cup white sugar,



1 large egg,



and1/2 teaspoon vanilla extract

Whisk until light and fluffy.

Add the flour mixture alternately with the milk and beat until just combined. Spread the batter into the bottom of prepared pan and smooth the top with a spatula.

Add the pint of fresh blueberries on top of the batter,

making sure they are evenly spread.



Cover blueberries with the crumble topping. Bake in a preheated oven for 40-50 minutes.

I added an extra 5 minutes on broil.

    >Hi, I'm making this now and I noticed that the ingredients list says 1/4 c cold butter for the topping and the directions say 1 stick. I went with the stick I figured you can't go wrong with extra butter.
