Basic Biscotti

Biscotti is one of those nice treats that go perfect with a cup of coffee or tea. Not too sweet, not too heavy. I love to make Biscotti to keep on hand in my canister for those “I need something sweet” moments!

To make this simply sweet treat, you will need the following ingredients:

 

2 1/4 cups all-purpose flour
1 1/4 cups white sugar
1 pinch salt
2 teaspoons baking powder
1/2 cup chopped almonds
3 egg, beaten
1 tablespoon vegetable oil
1/2 teaspoon almond extract
3/4 cup white chocolate chips

Pre heat oven to 350. In a mixing bowl, combine 2 1/4 cups flour,

1 1/4 cup sugar,

dash of salt,

2 teaspoons of baking powder,

1/2 cup chopped almonds,

and 3/4 cup white chocolate chips.


Mix dry ingredients and make a well in the center.

In a mixing cup or small bowl, combine 3 eggs,

1 tablespoon vegetable oil,

and 1/2 teaspoon almond extract.

Mix well.

Pour wet mixture into dry ingredients and mix and kneed
with your hands until dough is formed.

Separate the dough into 2 -3 balls depending on
how thick or thin you like your biscotti.

Using a piece of plastic wrap, shape the dough into 2 bar/logs.

Place in preheated oven for 25 minutes.

After the 25 minutes has elapsed, let them cool for approximately 10 minutes.
Transfer them to a cutting board and cut the bars diagonally.
(I like to cut them in half again so they are bite size)

Lay them back on the baking sheet on their side for 7-9 minutes
then flip them on their other side for an additional 7-9 minutes

 

For an extra special gift, dip or drizzle them with additional white chocolate and place in a decorative bag or box. These cookies ship well.
