This is some serious cornbread! It’s a perfect compliment to my Chile Verde Chicken Chili Recipe! You HAVE to make some honey butter to eat it with!
(just add honey to softened butter or margarine!)
To make this cornbread, you will need the following ingredients:
2 boxes Jiffy corn muffin mix
2 eggs
2/3 cups milk
2 1/2 tbs melted butter
4 green onions chopped
1 cup shredded cheddar cheese
In a large bowl, add 2 boxes corn muffin mix,
2 eggs,
2/3 cup milk,
2 1/2 tbs melted butter,
4 green onions,
and 1 cup cheddar cheese.
Mix well.
Pour into a seasoned and greased cast iron skillet.
(what?! you dont have one? How do you fry chicken?!?! Ok,
I guess you can just use an 8×8 pyrex or some muffin tins,
but it’s really not the same!! Bake in a preheated 425 degree oven for about 15-18 minutes
or until a toothpick inserted in the center come out clean.
PLEASE PLEASE serve with HONEY BUTTER!!!
