To make this YUMMY Chile Verde Chicken Chili Recipe, you will need the following ingredients:
2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can chicken broth
1 18-20 ounce jar salsa verde
1 (16 ounce) can RoTel
1 (11 ounce) can corn with red and green peppers
1/2 teaspoon dried oregano
1tbs dried parsley flakes
1/4 teaspoon ground cumin
1 can corn drained
1 rotisserie chicken (meat only)
2 (15 ounce) can white beans drained
In a pan, add 2 tbs oil,
2 cloves chopped garlic,
and 1 diced onion. Saute until onions are tender.
While the onions and garlic are cooking, fill your crock pot with 1 can of chicken broth,
18-20 ounces of salsa verde,
1 can of Ro-Tel (original)
1/2 teaspoon dried oregano,
1/4 teaspoon cumin,
1 tablespoon dried parsley flakes,
I shortcut a store bought rotisserie chicken,
By now your onions are soft, so add them,
2 cans of white beans drained,
one 11 ounce can of corn with red & green peppers drained, (also known as Mexicorn)
I also add the can of Drained whole kernel corn (not pictured)
Because everything is cooked, you could just heat on the stove, but I prefer to make it ahead of time and slow cook for 4 hours. You can put this dish together the night before and refrigerate until morning then pot it in the crock pot for 8 hours on Low.
Top with Cheese, sour cream and green onions.
