I am a huge snacker and picker, I just get so hungry between meals. This is a super easy Super food snack! I have lost 5 lbs in a month just by choosing healthy snacks and exercising!

If you are a beet fan, you may or may not know haw healthy beets are! They are definitely a SUPER food with over 8o nutrients. Beets are highly nutritious and “cardiovascular health” friendly root vegetables. Certain unique pigment antioxidants present in this plant have found to offer protection against coronary artery disease and stroke, lower cholesterol levels in the body and have anti-aging effects.
To make this Super easy Beet and goat cheese snack, you will need the following ingredients:
1 diced beet cooked, peeled and ready to eat.
(I found the brand eating right at my local Vons. Saves me a lot of work!)
1-2 leaves butter lettuce
(again, my local Vons has hydroponic lettuce in a plastic container. These leaves can also be used for lettuce wraps, egg salad, or chicken salad!)
Chavrie Fresh Goat Cheese, crumbled
(Goat cheese is soft delicious and low in calories!)
red onion to taste
3-4 raw pecans chopped
splash of balsamic vinegar
In a small bowl combine diced beet,


Fresh crumbled goat cheese,


and a splash of balsamic vinegar.

Mix, spread onto a butter lettuce leaf and Enjoy!
