So…do you ever have a recipe really want to keep to yourself? Well, this is one of those recipes! I created this recipe after sailing the BVI 10 years ago. We sailed a 63 foot catamaran through the BVI from island to island with a captain and a cook. One afternoon, the cook served a light salad with grilled chicken, but the big WOW was the dressing! I asked her what it was, and she said: “Mayo, Dill Garlic powder and water” It was so tasty. Over the years I have added to her recipe and tried to make it better. Well guess what?? I did!! After much thought, I have decided to go public with this AMAZING dressing!

To make this Delicious Cucumber Dill Dressing Recipe,
you will need the following ingredients:
1 cup mayonnaise
2 Tbs dried dill
1 clove garlic, minced
2 Tbs chives, minced
1 tsp lemon pepper
2 cups cucumbers, peeled & chopped
1 cup yogurt, plain (I use Fage Greek Yogurt)
1/2 tsp salt

In a med bowl, combine 1 cup mayo,

2 Tbs dill,

1 clove of garlic minced,

2 Tbs chives, minced

1 tsp lemon pepper,

2 cups peeled & chopped cucumbers,

1 cup plain yogurt,

At this point the dressing will be chunky. You can serve this as a dip with crudites or as a spread for a wrap or sandwich.

I use a stick blender, but you can definitely use a blender to liquefy the cucumber dressing.
pour into a container and refrigerate for at least 1 hour before serving.

Enjoy!!
