Absolut-ly delicious Blackberry Lemon Sour Cream Cake

I love the Farmer’s Market!

Especially when the berries are sweet and fresh! Blackberries are my favorite berry and I especially love them mixed with lemon! (Blackberry Margaritas are a summertime Fav!) This sour cream cake is such a nice addition to a ladies luncheon, brunch or outdoor bbq serve it up with some fresh lemonade, and you’ve got a cool and fresh summertime sweet!


To make this Blackberry Lemon cake,
you will need the following ingredients:
1 package Lemon Cake Mix
1 C Sour Cream
4 eggs
1/4 C sugar
1/4 C water
1/3 C vegetable oil
splash of Absolut vodka
2 lbs (32 oz) fresh blackberries 

Glaze

1 C powdered Sugar
2 – 3 Tbsp milk

 

 

 



In a large bowl, combine Cake Mix, 

 

 


1 cup Sour Cream, 

 

 


Eggs, 

 

 


1/4 cup Sugar, 

 

 


1/3 cup Vegetable Oil 

 

 


1/3 cup Water 

 

 

and a splash of Absolut Vodka in a large bowl. 

 

 


Beat at medium speed for 2 to 3 minutes. 

 

 


Add in 16 – 18 oz blackberries and mix thoroughly
(That’s my little 3 YO’s hand! He’s a good helper!)



pour into lightly greased bundt pan and bake at 350 for 45-50 min 

 

 

 



I always know my cake is ready when I can smell it. 

 

 


remove from oven and cool 10 minutes in pan and then turn onto serving platter.

After your cake has steamed for about 20-30 min, make your glaze.
add 1 cup powdered sugar in a small bowl



add 4 tablespoons milk, 

 

 

 



and the zest of 1 lemon.


Pour glaze over cake 

 

 

 



Slice, and EAT!!
(In my opinion, Bundt cakes are WAY better the next day.
So go ahead and make your cake a day or 2 before!)
