Niki’s Favorite Banana Bread recipe

This recipe was given to me by my friend Laurie. I love this recipe! It’s easy and it always turns out great! If you are a BubbleCrumb veteran, you will notice my love of the Bundt pan. I use a Bundt pan for almost all my cakes and sweet breads. Bundt cakes and breads are so easy to freeze in quarters or halves and make a great hostess gift or a delicious addition to any party or pot luck!

 

To make this easy banana bread recipe, you will need the following ingredients:

1 cup Butter or margarine softened
2 cups sugar
2 eggs
2 cups ripe mashed banana
2 teaspoons vanilla
3 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt

 

In a large mixing bowl, cream together 1 cup butter 

and 2 cups sugar. 

add 2 eggs 

and 2 teaspoons vanilla. Beat on a slow speed until incorporated. 

Add the 2 cups mashed bananas and mix until combined.

In a separate small bowl, combine the 3 cups flour, 

2 teaspoons baking soda, 

and salt. mix. 

Slowly add the flour mixture.
(I’m using my stand mixer, but you can use a hand held too!) 

Spray or grease a Bundt pan or loaf pan.
(I love Baker’s Joy or Crisco spray with flour!) 

The dough will be thick. Spread it evenly int prepared pan.
Bake in a 350 degree oven for 55-60 minutes.

    >By steam I mead I cover the hot cake with a cake dome so all the moisture stays in the cake. Hope you have success with it! :)
