This Salad has been a big hit everywhere I serve it! The secret to this hearty salad are the scallions and the tomato dressing. Make some garlic bread and serve it as a starter or as a meal!

To make this hearty salad, you will need the following ingredients:
6 cups torn lettuce leaves
8 ounces hard salami, julienned
6 ounces provolone cheese, julienned
1 cup shredded mozzarella cheese
2 medium tomatoes, chopped
1/2 small red onion, diced
1 (6 ounce) can pitted ripe olives ,
drained
2 small jars marinated artichoke hearts, drained
4 scallion stalks, minced (green onion)
1 (8 ounce) can tomato sauce
1/2 cup vegetable oil
1/4 cup red wine vinegar
1 teaspoon sugar
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon pepper
12 pepperoncini

Start by making the delicious tomato dressing.
In a jar or large cruet, combine 1- 8 oz can tomato sauce,

1/2 cup oil

1/4 cup red wine vinegar,

1 tsp. dried oregano,

1 tsp salt,

1 tsp sugar,

1/2 tsp garlic powder,

1/4 tsp black pepper. Mix well and refrigerate at least 1 hour.

To arrange the salad, start by adding the lettuce to a large bowl.
I like red leaf, but I often mix it with romaine.

top lettuce with 1/2 of the mozzarella,

The hard Italian salami,

The provolone,

tomato,

1/2 small red onion, diced,

black olives to taste,
(I like to leave them whole, it makes it easier to pick out if you don’t like olives)

4 diced scallions,

add the 2 small jars of marinated artichokes
(make sure you drain them!)

Add the pepperoncini around the outside for a little wow!

Drizzle with the dressing and toss about 5 minutes before serving!
