
I have been making this chicken salad since I was 17. I love it! If you are not a fan of onions, it’s not for you! I use green onions, but it is just as great with red onion. I also LOVE to serve it on Hawaiian bread or rolls. The sweetness of the bread, the crunch of the almonds and the tangyness of the onion makes for the most heavenly sandwich. I have also been known to throw in some crushed pineapple from time to time! Chicken salad is great to take on a summer picnic, to the beach or as an anytime snack!
4 chicken breasts
4 lg green onions diced
2-3 cups mayo
25 raw almonds, chopped
2 Tbls dried parsley, flaked
1 tsp salt
1 tsp pepper
